Ingredients:
For the Dough:
- 2 cups Bake Perfect gluten-free flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup plain yogurt
- 1/4 cup olive oil
- 1/4 cup warm water
For the Filling:
- 250g ground beef or lamb
- 1 small onion, finely chopped
- 2 tablespoons chopped parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
- 2 tablespoons olive oil for cooking
Instructions:
- Prepare the Dough:
- In a large bowl, mix Bake Perfect gluten-free flour, salt, and baking powder.
- Add the yogurt and olive oil, mixing until the dough begins to form.
- Gradually add warm water and knead the dough until it’s smooth and slightly elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Prepare the Filling:
- In a pan, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
- Add the ground meat and cook until browned. Season with cumin, coriander, salt, and pepper.
- Stir in the chopped parsley, then remove from heat and allow the filling to cool.
- Assemble the Sambousek:
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- On a floured surface, roll out the dough to a thin layer. Use a round cutter (about 3 inches in diameter) to cut out circles.
- Place a spoonful of the filling in the center of each circle, fold over, and press the edges to seal. You can crimp the edges with a fork for decoration.
- Place the sambousek on the prepared baking sheet.
- Bake:
- Brush the tops with a little olive oil or beaten egg for a golden finish.
- Bake in the preheated oven for 18-20 minutes, or until golden brown.
