Gluten-Free Saudi Sambousek

Ingredients:

For the Dough:

  • 2 cups Bake Perfect gluten-free flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup plain yogurt
  • 1/4 cup olive oil
  • 1/4 cup warm water

For the Filling:

  • 250g ground beef or lamb
  • 1 small onion, finely chopped
  • 2 tablespoons chopped parsley
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoons olive oil for cooking

Instructions:

  1. Prepare the Dough:
  • In a large bowl, mix Bake Perfect gluten-free flour, salt, and baking powder.
  • Add the yogurt and olive oil, mixing until the dough begins to form.
  • Gradually add warm water and knead the dough until it’s smooth and slightly elastic.
  • Cover the dough with a damp cloth and let it rest for 30 minutes.
  1. Prepare the Filling:
  • In a pan, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
  • Add the ground meat and cook until browned. Season with cumin, coriander, salt, and pepper.
  • Stir in the chopped parsley, then remove from heat and allow the filling to cool.
  1. Assemble the Sambousek:
  • Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • On a floured surface, roll out the dough to a thin layer. Use a round cutter (about 3 inches in diameter) to cut out circles.
  • Place a spoonful of the filling in the center of each circle, fold over, and press the edges to seal. You can crimp the edges with a fork for decoration.
  • Place the sambousek on the prepared baking sheet.
  1. Bake:
  • Brush the tops with a little olive oil or beaten egg for a golden finish.
  • Bake in the preheated oven for 18-20 minutes, or until golden brown.

 

  Enjoy your gluten-free sambousek warm, with a side of tahini dip or yogurt.
