Pearl Millet Flour Flatbread (Rotis)

Ingredients:

  • 2 cups The Grist Mill Pearl Millet Flour
  • 1/2 tsp salt
  • 1 cup warm water (adjust as needed)
  • 1 tbsp olive oil (optional, for softer rotis)

Instructions:

  1. Mix Dry Ingredients: In a large bowl, combine The Grist Mill Pearl Millet Flour and salt.
  2. Add Water: Gradually add warm water to the flour mixture, mixing continuously until a soft dough forms. Add olive oil if using.
  3. Knead Dough: Knead the dough for about 5 minutes until smooth. Cover and let it rest for 10 minutes.
  4. Divide Dough: Divide the dough into 8 equal portions and roll each portion into a ball.
  5. Roll Out: On a lightly floured surface, roll each ball into a thin circle about 6 inches in diameter.
  6. Cook Flatbreads: Heat a skillet or griddle over medium-high heat. Place a rolled-out dough circle onto the hot skillet. Cook for 1-2 minutes on each side until golden brown spots appear and the flatbread is cooked through.

Serve:

Remove from heat and keep warm. Serve with your favorite curry or dip.
