Ingredients:
- 2 cups The Grist Mill Pearl Millet Flour
- 1/2 tsp salt
- 1 cup warm water (adjust as needed)
- 1 tbsp olive oil (optional, for softer rotis)
Instructions:
- Mix Dry Ingredients: In a large bowl, combine The Grist Mill Pearl Millet Flour and salt.
- Add Water: Gradually add warm water to the flour mixture, mixing continuously until a soft dough forms. Add olive oil if using.
- Knead Dough: Knead the dough for about 5 minutes until smooth. Cover and let it rest for 10 minutes.
- Divide Dough: Divide the dough into 8 equal portions and roll each portion into a ball.
- Roll Out: On a lightly floured surface, roll each ball into a thin circle about 6 inches in diameter.
- Cook Flatbreads: Heat a skillet or griddle over medium-high heat. Place a rolled-out dough circle onto the hot skillet. Cook for 1-2 minutes on each side until golden brown spots appear and the flatbread is cooked through.
