Wheat Bran Pancakes

Ingredients:

  • 1 cup The Grist Mill Stone Ground Wheat Bran
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries (optional)

Instructions:

  1. In a large bowl, mix together The Grist Mill Stone Ground Wheat Bran, all-purpose flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, vegetable oil, eggs, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the blueberries.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
